I heard about it on-site and it made sense to me.
This bread is actually a "hybrid of history."
The baguette was originally introduced during the French colonial period.
But as it is, it won't be suitable for Vietnam's climate.
The humidity is high, and the temperature is also high.
As a result of the local people making improvements,
1. Blend rice flour with wheat flour.
2. Reduce fermentation time and incorporate more air.
3. Bake quickly at high temperature for a short time.
So what happens then?
The outside is crisp and popping
It's so light that it's almost hollow inside.
= This bread will bring out the flavor of the ingredients to the fullest.
In other words, banh mi is
"The result of evolution adapted to the environment."
What's even more interesting is what happens next.
Because the bread is light,
